Creamy Stuffed Peppers


It's summer, it's a million degrees, the last thing you want to do is turn on the oven to create a delicious appetizer to bring to the family BBQ. 
What you want to do is make something ridiculously easy that is also super tasty and looks amazingly pretty so everyone will think you are a super genius but you haven't actually had to do any work. 
Well, it's a good thing you are here because we have the perfect solution. 
We created these rather dramatic red and white appies for Canada Day but they will work for any occasion. Any color mini pepper will work too but the red certainly works best for Canada Day - and for Christmas. (Who doesn't like super simple appies when you are busy at Christmas time??)  
5 ingredients and about 10 minutes and you will be ready to wow your guests. 


Creamy Stuffed Peppers 

Ingredients
12 - 16 mini peppers
1 pkg (8 oz) cream cheese, softened
1/4 cup mayo
1/4 cup purple onion, finely diced
1/2 cup crumbled feta

Directions
Cut the tops off the mini peppers and then cut in half length wise and scoop out any seeds.


Place cut peppers on serving plate. 
In a serving bowl, beat the cream cheese until smooth, scraping sides as necessary. Stir in the mayo, onion, and feta.


Mix well. Pipe or spoon onto the pepper halves. 


Top with a little green onion spear, if desired, or sprinkle on a little more feta, or leave as is. Totally up to you! Chill, covered, until ready to serve or serve immediately. 
It really is that easy and they really are crazy delicious. 
How many peppers you get will depend on the size of the peppers and how full you fill them. If you can't find mini peppers then you can cut large peppers into 2 inch pieces and top with the filling.
