Cornflake Bacon Cookies


Here it is...the perfect breakfast! Now before you naysayers go and get all judgemental, hear me out.
They have cornflakes - breakfast food....
They have bacon - breakfast food....
They have an egg - breakfast food....
Ta-daaaaaa!
See, perfect for breakfast.



Cornflake Bacon Cookies

Ingredients
1/2 cup butter, softened
1/2 cup white sugar
1/4 brown sugar
1 egg
1 cup flour
1/4 tsp baking soda
10 strips bacon, cooked and crumbled (I believe I may have used more :) )
2 cups cornflakes

Directions
Preheat oven to 350. Line cookie sheet with parchment paper.
In large bowl, beat butter and sugars until light. beat in egg.
In medium bowl, whisk together flour and baking soda. Stir into wet ingredients.
Stir in bacon and corn flakes.
Drop by spoonful onto prepared cookie sheet. Bake at 350 until golden brown, about 15 - 20 minutes.
Remove from oven and let stand on cookie sheet for 5 minutes before removing to wire rack to finish cooling. Store in fridge.

Whoever it was that created these should win a prize. I mean, I eat cookies for breakfast but always felt like it was "wrong".... now I can eat a cookie for breakfast and justify it.
Take that conventional society with your "eat healthy" breakfast rules.
We have breakfast cookies now...bwah ha ha!
